中国铁路总公司运输局营运部副主任黄欣介绍，铁路总公司这次首次推出的“中国铁路餐饮”品牌，目的就是为了打造高铁餐饮名牌，让列车上的餐食呈现出标准化和专业化水准。

黄欣表示，以前是各种各样的品牌，18个局有18个餐饮企业，就没有“中国铁路餐饮”这个品牌。以后就是某个局的品牌+“中国铁路餐饮”品牌，旅客一看就知道是不是统一的品牌，是不是标准化的产品。“中国铁路餐饮”品牌由铁路总公司依法管理，所属铁路企业餐饮产品统一使用“中国铁路餐饮+企业商标”标识，提供标准化、专业化的铁路餐饮服务。

黄欣说，未来“中国铁路餐饮”系列产品由铁路企业针对不同区域、不同季节、不同时段、不同消费需求，在原有快餐盒饭基础上增加一些地域餐食，价格也会从低到高有所差异。研发推出包子、饺子、面条及多种富有地域特色的餐食，品种由原来的300多种增加到400多种，各铁路餐饮企业将不断研发更多的新品种。甚至这次还推出了不少15元以下的餐食，满足不同的档次需求。铁路总公司会按照国家食品安全管理法律法规规定，对“中国铁路餐饮”系列产品实施严格的质量控制，采取索证索票制度，控制生产加工、控制仓储配送及列车销售等各环节食品安全管理，为旅客提供安全、满意的餐饮服务。
